Monica grew up in a family of food producers and spent her childhood planting, harvesting and playing make believe on the land. It’s really this combination that makes Monica such a culinary force:

Monica honed her natural talent with an apprenticeship at the world renowned Los Angeles restaurant, Spago, under the direction of Wolfgang Puck and Gina DeCew Moi. As her skills became more refined, she was awarded a scholarship to study under Cecelia De Castro at the West Lake Culinary School. She then branched out into working as a private chef, which brought her the opportunity to craft meals for a discerning group of 100 Burning Man attendees in the middle of the Black Rock Desert.
An adventurous palate…
Monica’s appreciation for plating dishes in a beautiful, enticing way, helped her gain respect as a commercial food stylist during her time in Los Angeles as well. And her adventurous palate led her to exotic destinations as the resident chef of a turn-of-the-century steam boat on the Nile River.
All of these inspiring experiences helped hone her vision for Monica’s Restaurant in Beaumont, TX. Monica wanted to create a restaurant with a real sense of place; a genuine taste of the bounty that the Beaumont area has to offer. And she did just that.
After moving back home to southeast Texas, Monica married the portrait artist John Cobb, and created a space for her culinary creations that’s welcoming, comfortable, and delights – but doesn’t distract from – the tour-de-force of flavors on offer. Her panache for fusion shines brightly in the menu’s selection of Bahn Mon sandwiches and meal-worthy salads. Plus, there are new creations and twists of familiar favorites in the daily specials that are sure to turn each first-time diner into a new regular.

Monica’s Restaurant is 100% dedicated to the quality of ingredients being served. The beef is pastured and 100% grass-fed, the chicken is organic, the seafood is wild-caught, and the produce is either certified organic or grown locally using organic standards sans the expensive certification.
