What’s Clean
Posana is a 100% gluten-free kitchen that serves scratch-made dishes. Local sourcing of ingredients is a priority. Much of the produce is sourced locally when in season, of which some varieties are organically grown or certified organic. The chicken is sourced from a few regional farms and although not organic, the chicken is fed non-GMO feed. The beef is not organic or 100% grass-fed, but most of the farms they source from feed their animals non-GMO grains. Vegan options are available.
What’s Served
We visited during Covid restrictions, and during that time, dinner was being served 5 days per week. Although the menu changes often, you’ll find a steady line-up of an entree for each animal protein, exceptional appetizers, and a few sides. Posana boasts an excellent wine list and houses a full liquor bar complete with local drafts and ciders.
What I Ordered
I ordered the Chicken Primavera with house-made and gluten-free green onion fettuccini. Dragon tongue beans, sweet orange & yellow peppers, sliced fennel, and an heirloom sugo accompanied the hefty and tender bone-in slices of chicken. The fresh dragon tongue yellow beans were the standout here, popping with flavor and a complimenting texture. Overall, the dish was enjoyable but was a bit on the dry side…less pasta, more sugo, please.
