Swamp Rabbit Pizza makes their own pizza dough, including the GF variety, at their on-site bakery. In addition, the organic tomato sauce and parmesan sauce are also made in house, as well as the pepperoni and sausage toppings. The cheeses are local and made with milk from cows that are pastured and 100% grass-fed. The produce toppings are local and either organically grown or certified organic.
The Neopolitan Style pizza is cooked in a wood-fired brick oven. The 7 pizzas on the menu are 12″ round with gluten-free crust and vegan cheese available as options.
What I Ordered
We ordered a pepperoni pizza with a gluten-free crust that comes topped with both cheddar and mozzarella cheeses. The GF crust was on the thinner side with a nice crunch along the exterior and a puffy soft interior. Overall, the crust had a very nice texture but lacked in the flavor department a tad. The pepperoni was fresh and popped with a mild spiciness and the house tomato sauce was smooth and fresh as well. It was unanimous that we all would have preferred that the pizza was topped with just 1 cheese – the mozzarella, cheddar is better on burgers, just sayin’. This was certainly one of the cleanest pizzas made with the freshest ingredients we’ve found in quite a while. Although the pizza was decent, it wasn’t drool-worthy.
